Shrubs, also known as drinking vinegars, are made with copious amounts of fruit mixed with a syrup made of vinegar and sugar. Traditionally, shrubs were a way to preserve the goodness of fresh fruit for later use, usually as a beverage. During prohibition, shrubs were used to cover the taste of bathtub gin and led to the birth of cocktails.

Shrubs are found in the toolkits of mixologists as an acid alternative. For cocktails, a good place to start using shrubs is to replace lemon or lime in drinks with an equal amount of shrub. The acid of the vinegar simply replaces the acid of the lemon, and the fruit flavor provides a whole different dimension to a classic drink.

Or for a refreshing standalone beverage, add 2-3 tbsp to a glass of ice with seltzer or club soda, garnish as you wish.
Shrub Vinegar Cocktail
Deep River Shrub
Pomegranate Fizz
2 oz Vodka
1/2 oz Pomegranate Shrub
1/2 oz Fresh Lime Juice
4-6 Fresh Mint Leaves
Sparkling Water
Muddle mint with lime juice. Add ice, vodka and shrub. Top with sparkling water.Garnish with fresh mint.
All shrubs can be used as a simple beverage like this Pomegranate Soda
1 oz Pomegranate Shrub
Add ice and top with sparkling water
Garnish with lemon slice, cherry, mint, whatever you wish or whatever you have.
Vin and Tonic
2 oz gin
1/2 oz Rosemary Lemon Shrub
Add ice, top with tonic water
4 oz white wine
1/2 oz Rosemary Lemon Shrub
Add ice, top with club soda
Garnish with lemon peel and sprig of rosemary.
3 oz gin
1/2 oz Apple Fennel Shrub
Shake with ice and strain into a chilled martini glass.
Garnish with a twist

3 oz bourbon
1/2 oz Apple Fennel Shrub
Serve over ice
Garnish with a cherry
Uno Mas
3 oz tequila
1/2 oz Pineapple Jalapeno Shrub
Shake with ice and strain into a chilled martini glass.
Garnish with a pineapple wedge
Sweet Knees
2 oz rum
1/2 oz Pineapple Jalapeno Shrub
5-6 mint leaves
1 lime wedge
Muddle mint with lime wedge
Add ice, rum and shrub
Garnish with a mint leaf
Sunset Grille
2 oz vodka
1/2 oz Raspberry Shrub
1/4 oz Grand Mariner
Serve over ice
In fluted glass
1-2 tsp Raspberry Shrub
Garnish with a raspberry or two
Vodka and Grapefruit
2 oz vodka
1/2 oz Grapefruit Basil Shrub
Serve over ice

2 oz gin
